Summer Foods

It has been WAY TOO HOT lately to cook. The last thing I want to do is turn on my stove or oven and make my house hotter than it is already. All I want to do is blast the AC and eat something cold to cool me down. I want to share some of my favorite summer dishes with y’all today. These dishes require barely any cooking, all they require is a bit of assembly and you’re done!

Summer rolls

These are so versatile; you can pretty much put anything in it! The most popular combination is veggies, meat, and noodles but I have also seen people make summer rolls out of fruit. For a vegan friendly option, you can add tofu instead of meat. The only cooking required with this one is to make some hot water to dip the rice wrappers in to soften it and then you can fill with whatever you want to your heart’s content.

 

 

 

 

 

 

Ceviche

If you love seafood, this one’s for you. It’s a bunch of seafood (usually shrimp or fish, could be a mix of both) marinated with cilantro, tomatoes, red onion, and lime juice. The lime juice cooks the seafood while it chills in the fridge and it makes for a delightful snack when paired with a tostada. For those who are iffy about raw seafood, you can parboil it a bit so it’s not totally raw and it still retains a nice texture.  If you’re feeling fancy, you can add a couple slices of avocado!

 

 

 

 

 

 

 

Caprese Salad

This salad is pretty much idiot proof. Its sliced tomatoes paired with sliced mozzarella and fresh basil leaves. Make sure to get really fresh and ripe tomatoes, good tomatoes make a huge difference in this salad. Top with either a balsamic vinegar drizzle or a pinch of sea salt flakes and baby, you got an easy peasy salad going.

 

 

 

 

Milk & Cereal

When I’m feeling extra lazy and can’t be bothered to do anything, my go to meal is milk and cereal. Now that I’m an adult, I can have breakfast for dinner anytime I want. I like milk but milk doesn’t like me so now, I like my frosted flakes with lactaid. But you can have whatever floats your boat or suits your bowels.
